Nice looking item!
How does it compare to some other COTS items, like https://www.amazon.com/Inkbird-Max-1200 ... 4620&psc=1 this one?

I use one like that for my home brewing operations.

First it is a true PID controller, not a thermostat.
Second you can use a multitude of probes. The one you list does not allow you at use K type thermocouples. These allow me to control things such as lead pots for casting or to control one of my kilns. You can get thermocouples that can handle temperatures over 2000 degrees.

That said a thermostat like the one you linked to can control heating pads, and other devices. I know because I have a several of them and use them to control the temperature of heating pads for seed germination. Using them to control things like powder coating ovens, lead melting pots, or kilns is not viable.
